Method:-
- Wash okra. Clean each okra by towel / tissue paper so that all water gets removed. Cut ends of okra and make half vertical slit at middle of it.
- Heat oil into pan. Deep fry these okras till it turns brown. [As shown in image] take out okras on tissue paper and keep aside.
Fried Okras |
- Roast onion till gets brown, use 2-3 drops of oil if required. Let it cool.
- Grind roasted onion, peanuts, coriander, garlic, and ginger to fine consistency.
- Heat 4 tbsp oil into pan / kadhai. Add mustard seeds, cumin seeds then curry leaves to oil.
- Pour grinded mixture and fry till it starts leaving oil from sides.
- Add tamarind pulp, coriander powder and cumin powder, red chili powder, byadgi chili powder and turmeric powder.
- Add fried okras and salt.
- Add water to it and let it boil for 5-7 min.
- Garnish with coriander leaves. Serve hot with chapatti or roti.

Note :- You can add little amount of jaggery to curry if you like.
