Khajur- Khobryache Paushtik Ladu / Healthy Coconut Dates Ladu



 Ingredients:-

Chopped seedless dates / Khajur
250 grams
Grated dried coconut
2 cup
Sugar
½ cup
Cardamom powder
1 tbsp
Ghee / clarified butter
3 tbsp
Poppy Seeds
30 grams

Method:- 
  • Take ghee into a pan, add grated dried coconut into it and fry on low flame till get slightly brownish and crispier.
  •  Roast poppy seeds for few seconds. Take care that it should not burn.
  • Mix chopped seedless dates, coconut and sugar together. Grind it roughly.
  • Add cardamom powder, roasted poppy seeds to mixture. Mix it well.
  • Take handful of mixture on palm and make small ball of it by pressing mixture by other hand [In short make ladu of it ]

[Note: - You can use ghee if you think mixture is getting dry.]

These are healthy laddus as it contains goodness of dates which helps to improve hemoglobin in blood.

Vermicelli Kheer

Ingredients:-  

Vermicelli
1 Cup, cut into small pieces
Milk
½ Liter
Khoya 
50 grams
Sugar
1/2 cup
Crashed almond
2 tbsp
Crashed cashew nuts     
2 tbsp
Raisins
3 tbsp
Cardamom powder 
1 tbsp
Ghee
3 tbsp

Method:- 
  • Take a small pan, warm up 1 tbsp ghee into pan, add crashed almonds, cashew nuts into ghee.fry it till brown. Keep it aside. 
  •  Keep milk for boiling up to 30 min, add sugar, raisins, khoya and cardamom powder into milk, and let it boil slowly. Put gas on low flame. [Put saucer into milk so that it should not come out of pan]. 
  • Take fry pan; put 2 tbsp ghee into it.fry vermicelli for 5 min. turn off gas. 
  • Once milk gets ready, put vermicelli into it. Let it boil for next 7-8 mins. Kheer is now ready to eat 
  • Garnish kheer with fried almond and cashew nuts.
