Crispy OnionOnion Pakoda / Kanda Bhaji


Ingredients:-

Onion
1big
Coriander leaves
Handful
Red chili powder
As per taste
Ajwain seeds
½ tbsp
Turmeric powder
1 tsp
Besan / gram flour
As per required
Salt
As per taste
Oil
To deep fry

Method:-
  1. Cut onion into thin vertical slices. separate each part.
  2. Add remaining ingredients to onion except gram flour. Mix it well. And keep it aside for 10-15 mins
  3. Go on adding gram flour to onion mixture till it soaks all water from onion mixture. Mixture should be moist with thick consistency . DO NOT ADD WATER.
  4. Heat oil and pour batter in small portion .Deep fry bhaji / pakoda on medium flame.
  5. Serve hot with deep fried green chilies

Chicken Leg Tandoori


Ingredients:-


Chicken leg pieces
2
Hanged curd
1 small bowl
Garlic – ginger paste
2 tbsp
Red Chili powder
As per taste
Garam masala powder
 ½  tbsp
Coriander powder
1 tbsp
Cumin powder
½ tbsp
Mango powder
1 tbsp
Turmeric powder
1 tsp
Lemon juice
3-4 tbsp
Vegetable Oil
1 tbsp
Amul butter
As per required
Salt
As per taste




Method:-

  1. Wash & pat dry chicken legs, make deep cuts on each piece.
  2. Rub salt and lemon juice and keep aside for 30 minutes.
  3. Take hanged cured in one bowl, mix all above ingredient except butter. Mix it well.
  4. Apply this mixture to legs. Check that this mixture should get applied into the slits you have made to legs. Rub it very well.
  5. Let it marinate for 4 to 12 hours. More you marinate more tasty and delicious tandoori you will get.
  6. Roast it in hot tandoor or preheat oven and keep it for 15-20 min. In middle, take out and brush with the butter. Change side and keep it for grilling again.
  7. If you are using homemade charcoal tandoor then roast it for 15-10 min.
  8. Serve it with green pudina chatani and onion salad.

Ingredients:-
Pudina leaves
1 bowl
Coriander leaves
3-4 tbsp
Garlic – ginger paste
¼  tbsp
Curd
1 bowl
Salt
As per taste
Method:-
  1. Grind all above ingredients except curd. Make smooth paste of it.
  2. Mix it with the curd finely.
  3. Serve with hot tandoori or parathas.. 

Pudina Chatani

Ingredients:-


Onion
1
Coriander leaves
3-4 tbsp
Red chili powder
As per taste
Mango powder
1 tbsp
Lemon juice
1 tbsp
Salt
As per taste


Method:-

  1. Cut onion into your favorite shape. You can cut rings or vertically thin.
  2. Add remaining ingredients to onion. Mix it well.
  3. Serve as side dish in your lunch /dinner.

Masala Tak [ Masala Buttermilk ]


Ingredients:-

Chilled buttermilk
½ liter
Homemade ginger paste/crushed ginger
½ tbsp
Cumin powder
1 tbsp
Chopped coriander
1 tbsp
Chopped mint leaves
½ tbsp
Salt
As per taste
 

Method:-
Mix all above ingredients  and serve chilled. You can add pinch of sugar if you like sweet taste. This will definitely beat summer. Happy Summer of 2015 !!!
