Curd Rice


Ingredients:-


Steamed rice
2 cups, slightly overcooked
Fresh curd 
1 cup, should not be too much sour
Coconut milk 
½ cup
Chopped green chilly
1 tbsp
Garlic
1 tbsp
Red chilly 
1, make two halves
Curry leaves                                    
7-8 leaves
Cumin seed powder
½ tbsp
Cumin Seeds
1 tsp
 Mustard Seeds
1 tsp
Urad Dal (White lentils)
2 tsp
Chopped coriander leaves
2 tbsp
Oil
1 tbsp


Method:-
  • Take steamed rice into bowl,
  • Add curd and coconut milk into cooked rice, mix it well. Keep it aside.
  • Take a Tadka pan, pour oil in it. Let it warm.
  • Add mustard seeds, then cumin seeds into oil. Then add urad dal, garlic. Let garlic turn           brownish.
  • Then add chopped green chilies, red chilies, curry leaves, ginger paste in pan.
  • Turn off gas and then add cumin sees powder. Mix this seasoning into rice.
  • Garnish rice with coriander leaves.

Vermicelli Kheer

Ingredients:-  

Vermicelli
1 Cup, cut into small pieces
Milk
½ Liter
Khoya 
50 grams
Sugar
1/2 cup
Crashed almond
2 tbsp
Crashed cashew nuts     
2 tbsp
Raisins
3 tbsp
Cardamom powder 
1 tbsp
Ghee
3 tbsp

Method:- 
  • Take a small pan, warm up 1 tbsp ghee into pan, add crashed almonds, cashew nuts into ghee.fry it till brown. Keep it aside. 
  •  Keep milk for boiling up to 30 min, add sugar, raisins, khoya and cardamom powder into milk, and let it boil slowly. Put gas on low flame. [Put saucer into milk so that it should not come out of pan]. 
  • Take fry pan; put 2 tbsp ghee into it.fry vermicelli for 5 min. turn off gas. 
  • Once milk gets ready, put vermicelli into it. Let it boil for next 7-8 mins. Kheer is now ready to eat 
  • Garnish kheer with fried almond and cashew nuts.

Chicken Chilli

Ingredients:-


Boneless chicken  
250 grams
Chopped cabbage
1 cup
Chopped green capsicum
1 cup
Chopped spring onion leaves
3/4 cup
Chopped garlic
7-8 cloves
Chopped ginger  
2 tbsp
Chopped green chilies
2 tbsp
Soya sauce
4-5 tbsp
Green chili sauce
2 tbsp
Oil
5 tbsp

Method:-
  • Cook chicken by adding salt for 15-20 min on medium flame.[Don't overcook it] 
  • Strain water from cooked chicken.keep pieces aside. 
  • Take a pan, pour oil in it. 
  • Add garlic,ginger and green chilies .fry till it gets brownish. 
  • Add cabbage,capsicum and pinch of salt.Then cover pan with lid/plate for 1 min. 
  • Add chicken to it. 
  • Add soya sauce and green chili sauce on it.Fry it well. 
  • Garnish dish with spring onion leaves.Serve hot.
